Germán is the protagonist of a new way of thinking and feeling Mediterranean cuisine. The raw material of his work is emotion, a fundamental condiment that surprises diners with every dish.
His tools are fire, the heat of iron, the mystery of smoke, the power of acidity. Throughout his vast trajectory, he has gained a deep knowledge of techniques and a great mastery of flavors that are the basis for his limitless creations.
Each of Germán’s menus is a journey that invites you to cross a bridge between memory and the future. An evocation, an aroma of memory, an exploration of the unknown, whether through the empanada Justina, an iconic FIERRO snack and at the same time a tribute to his mother and to Mendoza, where he grew up; or the reinterpretation of the parsnip, that forgotten root that Germán has elevated with an innovative twist.

FIERRO’s research and development space is a fundamental pillar of the proposal, a gear in which freedom is the norm and where Germán’s avant-garde thinking and vision come to life. Innovation integrated to the territory that drives a culinary vanguard with flavors of childhood, Mediterranean and with a look on the Albufera, the formulation of flavors that builds a new idea.
Germán directs different projects from his mother company, Tándem Gastronómico, together with Carito Lourenço and together they are the creators of FIERRO, Doña Petrona and La Central de Postres. He also participates actively in different national and international gastronomic events and congresses, and as a professor in gastronomic and innovation centers.
Since 2002, he has been Argentina’s Country Brand Ambassador.
