Carito is a creative head and soul. With the aim of generating a new culture of Mediterranean cuisine, he draws from his tasty Latin roots, the traditions of his native Cordoba and the diverse pantry of Valencian gastronomy. Two perspectives that contrast and flow together when designing each menu.<\/p>\n

Carito fuses the frontiers of sweet and savory; it combines treasured flavors with avant-garde techniques and takes each product to its maximum expression.<\/p>\n

Intuitive, perfectionist, passionate about cooking, Carito Louren\u00e7o became the first Argentinean chef to obtain a Michelin star in 2022 for her work at FIERRO, together with her partner and associate, Germ\u00e1n<\/p>\n

Carito’s work is based on a commitment to generate proposals with a positive impact on gastronomy, with a special focus on promoting the talent of women chefs of her generation.<\/p>\n

Ambassador of Marca Pa\u00eds Argentina, a recognition that she carries with great pride.<\/p>\n

With Germ\u00e1n, he directs different projects from his mother company, T\u00e1ndem Gastron\u00f3mico, and they are the creators of FIERRO, Do\u00f1a Petrona and La Central de Postres.<\/p>\n

In addition, Carito has shared his accumulated knowledge of his career in lectures and national and international gastronomic congresses. He has also given training in gastronomic study centers…<\/p>\n

The construction of a new taste memory of the future <\/strong>is the leitmotiv of FIERRO, where the creative and visionary vision of Carito and Germ\u00e1n is reflected in every moment of the restaurant. Inspired by C\u00f3rdoba, Mendoza and Valencia, FIERRO fuses identities and traditions in a Mediterranean cuisine that pays homage to La Albufera, fire and innovation.
