FIERRO is the place where time merges with taste, where each dish is a vestige of the past and a declaration of the future. The MEMORY not only as a memory, but as a thread that links the territory, the identity and the experiences that have shaped our cuisine.

MEMORY drives constant evolution where the present is built from what we were and what we are today.

Ten years ago, in the heart of Valencia, FIERRO was born, a space where the kitchen became a language of emotions, memory and TERRITORY. FIERRO has been a melting pot where Mediterranean Argentinianness has taken shape, fusing roots and reinventing traditions. Ten years cooking links and telling stories.

To celebrate these ten years, we have gathered some of the dishes that have marked our history: those “signatures” that were milestones of each season and hide beautiful stories. Dishes that are archives of memory.

We have worked and orbited around them to renew and reinterpret them as we are now.

CORN IS LANGUAGE AND BONDING

The gift they received –popcorn – is not a random detail.– is not a random detail.

Corn is a symbol of belonging. In FIERRO, corn appears as an echo of origin, as a thread that unites two apparently distant territories: the vastness of the Americas and the texture of the Mediterranean.

In Argentina, corn is food, ritual, mother. It is in the memories of childhood, in the dishes that are cooked with time, in the hands that knead history. At FIERRO we bring it to the table as a living heritage. Cooking it not as a foreign ingredient, but as a bridge of identity.

Corn, in FIERRO is IDENTITY y MEMORY. It is reinterpreted and read from a Mediterranean point of view, from the soil we now walk on and from the products that are born near the sea. Thus, corn becomes an emotional guide, a way of saying who we are, even thousands of kilometers away.

Cooking corn is an act of cultural translation. It is to remember that the ingredients also migrate, that the flavors also mix, that the root is not lost when the soil changes.

FLAVOR AS A REFLECTION IN THE FIERRO KITCHEN AND LANGUAGE OF MEMORY

TASTE is the trigger of EMOTION. It awakens senses and reveals stories. When taste is authentic and sincere, it becomes a language. A language composed of the experiences that sustain it and the territory that nourishes it.

TASTE is the most visceral and evocative form of memory. A bite can transport us to a story, a house, a childhood, a landscape. In FIERRO we explore the taste memory not only from the memory, but from its capacity of evocation and transformation. As a presence that occurs in the instant, something that happens to us but that can only last in memory. And so, when we eat, when we taste, we remember, even when we do not know what we are remembering.
